The main characteristics of the SMESA CHEESE WHEEL CUTTER are speed and accuracy, which together with strength and versatility make this machine a safe and reliable instrument for work. The ergonomic design, along with the opening doors in stainless steel mesh make it easy to clean the machine.

The SMESAMA cheese wheel cutter is used to recover discs starting from cheese shapes with crust. Before the cutting phase, the machine, if equipped with the perforator (optional), cuts the central core of the shape, operation that may be excluded depending on the production requirements. The machine structure is made of stainless steelAisi 304 with perimeter protection mesh.

The machine is used to remove the crust from the cheese disc in line. The structure of the machine is in Aisi 304 stainless steel with perimeter protection in the Tech network.

The machine is used to obtain shells or cubes from moulds of grained hardened cheese that were previously peeled and flattened and, if necessary, shaped into discs. The measures of the output product may vary by changing the cutting blade and the measures set at the panel. The machine is made of Aisi 304 steel with perimetral protections made of Tech inox steel mesh.


The line is used to obtain, at a fixed weight, slices from semi-hard cheese (Asiago, Roman Pecorino) or wedges if the machine works with hard cheese (such as Parmesan cheese or Grana Padano). In the second case, the wheel is first divided into disks from which wedges are then obtained.
FABER has developed an innovative cleaning system for hard cheeses and semi-hard cheese. The process is carried out entirely dry through special jets/nozzles which convey a mixture of air / abrasive food powder thereby obtaining an effective cleaning of the surface, uni- form and delicate without leaving any residual polluting.
